This holiday, try making Guru Jagat’s Cosmic Cabbage Soup. It’s a delicious, warming, restorative, and majorly liver cleansing dish.
- Generous amount of Ghee or Coconut Oil
- 1 Onion, sliced
- 1/2 head Red Cabbage, thinly sliced (like coleslaw)
- 3 Beets, quartered
- 1/3 – 1/2 cup Apple Cider Vinegar (depending on desired tanginess)
- 4-5 cups Vegetable Broth
- Grey Celtic Sea Salt
DIRECTIONS: In a large soup pot, heat a generous amount of ghee or coconut oil. Add onions, cabbage, and beets, and sauté to a light smoke. At that point, pour 1/3 – 1/2 cup apple cider vinegar. Let vegetables braise in the vinegar for 2 minutes. Add enough vegetable broth to cover vegetables by about 3 inches. Add about 1 tablespoon of salt and simmer the vegetables until they are soft. To serve, add additional ghee or apple cider vinegar to taste.
